Prolific San Marzanos

These are San Marzano tomatoes and they’re doing great this year. This Italian variety is good for sauce, canning, drying, and paste because it doesn’t have as many seeds or water. The vines don’t grow very tall and that’s a good thing because they are so heavy with fruit.

I like to pick them while they’re only partly red then wash and let them ripen the rest of the way indoors. This way I can sort by ripeness and have multiple tubs ready for canning at the same time.
